Who is derrière (behind) Derrière?
It’s the ambition and partnership of 3 French friends, passionate professionals, food maniacs and Barbados lovers:
Daniel Echasseriau, Jean Jacques Carquillat and Jules Gualdoni.
Our Chefs

Chef, hôtelier Daniel Echasseriau born in Saint Nazaire on the west coast of France, passion and love of cooking was instilled by his mother and father, who would both educate and share their passion for the French terroir and respect of the product and nature.
Chef Daniel has a real international background, he has built his career in France, England, Africa, Thailand, Saudi Arabia, French Polynesia, the British Virgin Islands, working in well renowned establishment like Midsummer House, a one Michelin Star and two-Rosette restaurant in Cambridge, the 5-star luxury hotel The Coconut Residence in Gambia, the Hilton Bora Bora Nui resort, the Rosewood Corniche Hotel.
But the Caribbean has always been in his heart: he discovered Barbados in 1995, working at the Royal Westmoreland Hotel, La Maison Restaurant, followed by the Fairmont Royal Pavilion and Glitter Bay Hotel.
He lived and worked in St. Lucia and Antigua before returning to Barbados in 2014. He took on new challenges at St. Peter’s Bay Resort, Port Ferdinand Resort and Marina, and Nikki Beach. In 2022, he finally settled back in Barbados as a resident and became the head of Food & Beverage at the Hilton group.

Born in Chamonix, in the French Alps, Chef Jean Jacques grew up into the culinary world. While his grandmother worked as a chef at the local hotel for 47 years, the Chef began his culinary journey under the guidance of his father, the owner of Le Ratelier, a restaurant and club in their hometown. At 15 years old, Chef JJ headed to Paris for his first job in the esteemed Gaston Lenotre De Paris as an assistant to the pastry chef.
Working in world renowned restaurants such as Fauchon in Paris, la Mirabelle in London and Ritz Carlton in Lisbon laid the groundwork for Chef’s move to New York City where he was part of La Reserve and Le Bernardin. In 1996 he moved to Kingston, NY, to open his own restaurant, the “Le Canard Enchaine”, a classic French bistro that became a recognised institution in the Hudson Valley.
Finally, in 2022, he embarked on a new challenge in Barbados, where he had spent his vacations for the past 20 years, opening with his wife “Le Shack Restaurant”, a unique French Caribbean experience, and called Barbados home.

Portobello Road. Dover Street. All former hotspots of Jules Gualdoni. La Cabane’s tropically spirited owner made his mark in central London by launching a deluge of bars and nightclubs. After a decade, he decided it was time to escape to a destination that could satiate his obsession with rum.
After establishing The Cliff’s cocktail lounge, Jules soon changed pace again in 2017 to build a rustic Caribbean rum shack of his own: La Cabane.
